Dr. Sastry works to develop alternative processing technologies to inactivate harmful pathogens within food without compromising quality. His research interests include ohmic heating, aseptic, high pressure and PEF processing, the influence of moderate electric fields on biological materials, and the safety of fresh produce. Dr. Yousef’s research focuses on microbial safety of food, including investigation of antimicrobial peptides and ozone-based technologies effective against foodborne pathogens. He is also investigating how microbial pathogens respond to ultra-high pressure and pulsed electric fields.

Dr. Kaletunc’s research interests include microencapsulated bioactive compounds; using food as a vehicle for improved food quality, human health, and wellness; and application of gaseous sanitizers to improve fresh produce safety. She has extensive experience with theory and application of thermal and rheological techniques to food and biological materials.

Dr. Wilson’s research interests include flavor chemistry, food quality evaluation, and improving thermal processes for foods and commodities. He teaches courses in food processing, quality assurance, and consumer issues and works to give students hands-on experience in labs and sensory kitchens.

Dr. Gleason is an instructional designer and educational media developer and has helped build educational programs for diverse audiences, particularly in food safety, across ages, borders and cultures. She heads a nationally recognized production studio for creative video, multimedia, distance outreach and educational game production. Current projects include produce contamination modules, an online interactive food safety lab, and outreach materials for norovirus education.
