Once the consumer purchases fresh produce, it inevitably has less-than-ideal storage conditions. Typically, household refrigerators only cool at around 4º Celsius, and some run even warmer. Packaging, which may have protected the product by reducing respiration or preventing moisture loss, is likely to be compromised soon after purchasing. This produces conditions ideal for psychotrophic (cold-tolerant) bacteria. If the produce was contaminated during production/distribution or has encountered a contaminant from the consumer, these bacteria can thrive in the consumer’s fridge. Consumers should keep this in mind and be sure to always check the expiration date and to throw out anything that has expired.
