Processors have a responsibility to the consumer to properly sterilize their products. It is the hope of the Fresh Produce Safety Initiative that that we might inspire a decision among processors to undertake a safer sanitation method than what is currently in use. For this reason, as we investigate new techniques for sanitizing produce, we pay great attention to the practicality of a technique. As we develop feasible sanitation alternatives, we hold workshops to demonstrate these alternatives.
